Cheats Southwest Breakfast

A few days ago I was thinking about what I could have for breakfast. Then it hit me! A Cheats Southwest Breakfast (I'll explain the cheat part soon!). With a little bit of organisation this could be a weekday breakfast and with a little less organisation a yummy weekend breakfast. 

So the cheat part is a store bought Chipotle Black Bean Burger, I've been using these ones from Costco, from memory they are about $12 for 12-

1 Chipotle Black Bean Burger
1 Egg
2 Tablespoons of Mexican Cheese
1/3 Cup Cilantro (or other amount as desired)

1. Cook burger according to packet instructions
2. When the burger has about five minutes to go cook the egg in a fry pan, I like to leave the yolk of the egg soft
3. Once the burger is done cooking, sprinkle the cheese on top, then cilantro, then place the egg on the very top
4. Enjoy!

It works out to be about 315 calories and 26 grams of protein which works for me!
