One Pot Wonders - Parmesan and Pesto Gnocchi

This has been a go-to meal of ours for years. It has 5 ingredients and while it does use a couple of pots and pans it's simple and delicious comfort food that can be thrown together in a flash!

3 Tablespoons Sundried Tomato Pesto
700 grams Gnocchi
180ml Thickened Cream
150 grams Baby Spinach
1 cup Parmesan Cheese

1. Bring some water to the boil and carefully place the gnocchi in the water.
2. Whilst the Gnocchi is cooking in a pan heat the cream and pesto, stir together.
3. Once the cream and pesto are warm at the baby spinach let it wilt.


4. When the gnocchi is cooked it will rise to the top of the boiling water, as it rises place it in the pan on top of the spinach (this will help the spinach wilt quicker). Once you have transferred all of the gnocchi to the pan stir it with the rest of the ingredients.




5. Spray an oven baking dish with oil, and tip the cream/pesto/gnocchi mixture into the dish. Sprinkle a generous amount of parmesan cheese on top
6. Place the dish on the oven until the parmesan starts to turn light golden brown.



This will make about 4 small-ish serves, just cook more gnocchi if you need to stretch it further.

    1. When you put the gnocchi in the oven you just want to grill the cheese on top, so about 180 C (or 350 F) until the cheese is light golden brown. Hope that helps. Enjoy!
